Sous Chef

Summary of Responsibilities:
  • Maintain on-going training and development of employees, conduct employee performance reviews and follow up in a timely manner
  • Manage employee performance, through training, coaching, or corrective action as required
  • Ensure appropriate staff scheduling and monitor staffing levels in conjunction with determined budgets
  • Support a safe working environment by ensuring all staff are working in compliance with the health and safety regulations and promoting our health and safety program (Serve Safe, hazard ID, etc.)
  • Support and promote environmental practices and programs
  • Liaise with food stores to ensure the proper rotation of foods and red flag any items that need to be inserted into production to avoid any losses
  • Seek opportunities to increase food revenue, decrease kitchen expenses and maximize departmental productivity without compromising guest satisfaction
  • Will be responsible for kitchen operation in absence of Executive Chef and Executive Sous Chef
  • Maintain departmental standards in accordance with Fairmont Hotels and Resorts core standards
  • Ensure effective co-operation between outlets and the kitchen
  • Lead and inspire colleagues to reach their full potential
  • Create memorable dining experiences for all guests
  • Assist with goal development and follow up, departmental initiatives, budget reviews, etc
  • Compliance with all safety regulations of assigned tasks, and ensure a clean and safe working environment with active participation in the hotel health and safety program
  • Adhere to all environmental policies and programs as required
  • Other reasonable duties as assigned

Qualifications: 
  • The successful candidate will be a highly energetic individual who is excited about the challenges that a large and versatile resort offers on a day to day basis
  • Minimum of 7-8 years well rounded experience in EACH area of the culinary field
  • Valid trade qualifications required
  • A passion for food, desire to further develop culinary and leadership skills.
  • Must be an effective supervisor, trainer, and administrator
  • Must be innovative, detail-oriented and quality conscious
  • Knowledge of new trends in presentation and preparation
  • Experience in dealing with several food and beverage operations and catering venues at one time
  • Minimum of 2-3 years tenure at Sous Chef level an asset
  • Previous culinary competitive experience an asset
  • Current First Aid and Serve Safe training an asset
  • Proven ability to deal effectively with staff related issues

Physical Aspects of Position:
  • Constant standing and walking throughout shift.


Bell person

The Fairmont Chateau Lake Louise is looking for a dynamic individual who adds optimism and creativity to the workplace. An innovative person with excellent relationship building skills, people focused, highly organized and in tune with the needs of our guests.

Summary of Responsibilities:
  • Answer guest inquiries regarding the area and hotel services and facilities
  • Checking in individuals by assisting with baggage and parking vehicles
  • Carry luggage for guests, escort incoming guests to their rooms
  • Checking out individuals by assisting with baggage and retrieving their vehicles
  • Obtain times for all tour group arrivals and departures
  • Checking in tours by unloading baggage from buses, keeping an accurate count of baggage and delivery of luggage to guest rooms
  • Assuring that all car keys are accounted for
  • Receive and deliver items for guests, handle guest complaints and requests, and maintain luggage storage areas
  • Compliance to all department & hotel safety standards 
  • Offer information regarding points of interest, assist guests with special needs
  • Ski Storage duties - in season: Storing and retrieving guests skis and toboggans and cleaning and upkeep of area
  • Future plans to multi-task with Front Office
  • Adherence to all hotel and departmental Environmental initiatives
  • Compliance with all safety regulations of assigned tasks, and ensure a clean and safe working environment with active participation in the hotel health and safety program
  • Adhere to all environmental policies and programs as required
  • Other reasonable duties as assigned
Qualifications:
  • Knowledge of hotel services and Lake Louise area would be an asset 
  • Must have an Alberta registered driver's licence and must obtain and present up-to-date Driver's Abstract free of any serious demerit points
  • Alberta Class 4 driver’s licence must be acquired prior to beginning employment or within 3 months of service.
  • Professional appearance and attitude
  • Must have or be willing to successfully complete CPR/Emergency First Aid course
  • Front Office experience would be an asset
  • Must be physically capable of meeting the very physical demands of the position
  • A past work experience involving hard physical exertion would benefit

Physical Aspects of Position:

  • Ability to lift, carry and move large and heavy items on a regular basis. Minimum of 50 lbs.
  • Constant standing and walking through shift

Kitchen Steward

Providing clean cutlery, dishware, and culinary equipment to the hotel using industrial grade dishwashing machinery and equipment. Ensuring the overall cleanliness of the dishwashing area and relative kitchen space. Working side by side with Culinary team assisting with prep duties when possible.

Department Overview:
Kitchen Steward to be trained and able to work in five different kitchens. Ability to learn greater responsibility in Stocking, Van Driving, and Garbologist roles can be discussed after performance evaluations. Potential to develop culinary skills and open up potential career paths available for the successful and eager candidate.

Summary of Responsibilities:

  • Reporting to the Chief Steward, responsibilities and essential job functions include but are not limited to the following: 
  • Consistently offering professional, engaging and friendly service 
  • Exuding a positive personality, smile, and promoting constructive work environments. 
  • Providing clean dishes, cutlery, baking & buffet equipment 
  • Operating industrial grade cleaning machinery and tools 
  • Exposure to food service grade chemical cleaning supplies 
  • Upkeep clean and sanitary conditions of dishwashing areas and relative kitchen spaces 
  • Assisting with culinary prep duties and adhering to requests by culinary CDP, Sous, and Executive Chefs 
  • Working in humid and hot environments
  • Team-based environment working in two to three staffing areas for short to long periods of time
  • General cleaning - mopping, sweeping, scrubbing, cleansing, polishing 
  • Rotating shift work with repetitive motions 
  • Lifting 20-30 lbs 
Qualifications:
  • Previous cleaning or food and beverage experience in a fast paced environment is an asset, but not required
  • Self motivated with excellent communication skills
  • Physically able to carry out the demands of the position including pushing, pulling, bending, heavy lifting and standing for long periods of time

Physical Aspects of Position:

  • Able to reach height of 6 feet to store equipment on a regular basis is a requirement of the job.
  • Able to lift up equipment up to 50lbs often during the work day
  • Able to stand up for up to 5 hour period
  • Able to push and pull heavy equipment up to 500lbs
